Barrel-Aged Sour

Continuing with the BARREL #9 and BARREL #22 series, we used a few of our Pinot Noir wine barrels brought in from J Vineyards & Winery from the Russian River Valley of California, filled them with 2014 French Merchant Saison. Instead of adding souring microorganisms, additional yeast, fruit, or anything else to compose a new flavor profile, this Saison was aged naked in the cabernet barrel environment developing its own, unique sour character. What resulted is a very tart sour beer, with a light oak character and earthiness. This beer is popping with complexity. Enjoy!
