Blueberry Witbier

Many of you have been asking for a wheat beer for the summer. Well, here it is. We joined forces with Anthony Carolllo (Head Brewer) and Kevin Chorzempa (GM) from The Lucky Monk Brewery in South Barrington to create this refreshing take on a Belgian style Witbier. Pale and hazy in appearance, it’s true to the classics – bready with a soft, dry, slightly tart finish. We added some local blueberries from McCann’s Berry Farm in Woodstock and DeGrandchamp in South Haven, Michigan. The blueberry addition is subtle in this Witbier and is most noticeable at the end of the finish as the beer warms a little – somewhat like a light blueberry pancake flavor. As with all of our Belgian styles, this beer was fermented in our open fermenter.
