St. Pepin Brett Saison (Barrel Aged)
Like BARREL #9, we used a few of our Pinot Noir wine barrels brought in from J Vineyards & Winery from the Russian River Valley of California, filled them with 2014 French Merchant Saison and aged with Brettanomyces (Brett) yeast. In lieu of raspberries, we featured St. Pepin grapes from a family vineyard in Marengo. St. Pepin grapes, originally bred in Osceola, Wisconsin, are white grapes known to produce Riesling type and ice wine styles. This infused grape sour beer is dry and golden; delightfully complex with notes of honey, graham cracker, black pepper, fruity notes reminiscent of Riesling style white wine, funky Brett, and oak character. The overall acidity is relatively low. Pair this beer with Chicago's finest cheesecake – I dare you.
