This barrel-aged sour beer features St. Pepin grapes from our family vineyard in Marengo, Illinois, that were harvested, destemmed and crushed. The grapes were then added into wine casks from J’s Vineyard & Winery, located in California’s scenic Russian River Valley in Sonoma County, along with freshly filled Belgian style Saison. The beer was fermented for over a year in the barrels existing mixed Brett culture, along with the cultures native to the St. Pepin grape skins. St. Pepin grapes, originally bred in Osceola, Wisconsin, are white grapes known to produce Riesling type and ice wine styles. Barrel #22 is reminiscent of a Muscat or Riesling wine, delightfully complex with clover honey and graham cracker notes and terrific grape character, along with some earthy, bleu cheese tones from the mixed cultures. The overall acidity is relatively low.
