This Barrel-Aged Dark Sour beer was brewed and fermented using theSolera method in oak wine barrels from J Vineyards & Winery from the Russian River Valley of California. Using the Solera method, a portion of the previous beer is left in the barrel and is then blended with the new batch being put in; this provides additional flavor complexity and inoculation of wild yeast/bacteria in the new beer. Barrel #91 has an aroma and flavor that is full of dark malt characteristics, including bitter chocolate, dark caramel/toffee, and dark fruits like black cherry, blackberry, plum and raisin. Imagine munching on a handful of sour chocolate covered-raisins. This beer has a firm acidity and dry finish which balance the big malt characters which make this beer drink as if it's far less in ABV.
