Last year, a farmhouse Saison was brewed and then fermented in our open fermenter. It was later transferred directly into our wine barrels along with La Crescent grapes. When it came time to discuss a new grape beer creation, the idea of a Bellini style beer was suggested fortuitously by the wife of one of our brewing team members. Excited by the idea, we brought in peach and apricot puree and blended it in stainless with the Farmhouse ale. Barrel #11 is the final result. It has been purposefully bottle conditioned to high, sparkling carbonation levels -- perfect to serve at any special occasion.
